Calderon Guardia, laid the foundation for what was to be known as the Inter-American Insitute of Agricultural Sciences. Today that institute has become the Inter-American Institute for Cooperation on Agriculture (IICA), and has evolved from an institute for tropical agricultural research and education into what it is today: the specialized organization for agriculture and rural development within the Inter-American System. With a mission that now encompasses the facilitation of innovative technical cooperation between its Member States, and the achievement of sustainable development in aid of all the peoples of the Americas, IICA has become the Western Hemisphere's premier international agency dedicated to cooperation on agriculture.

Assuring the Safety of Foods for Domestic Consumption and International Trade
Conducted in collaboration with Interamerican Institute for Collaboration in Agriculture (IICA), this five-day workshop introduces the topic of food safety, its requirements in international trade such as Sanitary and Phytosanitary measures and subsequently, the requirement for risk analysis for products intended for international trade.
The first segment of the workshop is designed to lay fundamentals of food processing, processing systems to assure the safety of the food products and designing and implementing food safety systems in food processing.
The second segment of the workshop is designed to discuss risk assessment techniques, methods, interpretations, and communication strategies in food and food processing systems.
